Acorss the country there is a growing trend. Increasing numbers of people are raising their own livestock and growing their vegetables for a more homely take on their favourite pork, lamb and poultry dishes.
Celebrity chefs such as Gordon Ramsay, Jamie Oliver and, in particular, Hugh Fearnley Whittingstall have been at the forefront of this food revolution. Thousands have been inspired to start rearing their own livestock themselves watching Hugh’s River Cottage series.
However, this is not always practical. City dwellers are frequently unable to find the space to grow their own veg, let alone rear animals!
Quality produce is sold by butchers, grocers and farmers markets nationwide. Your favourite lamb, beef, poultry and pork recipes will immediately be tastier using meat of better quality.
It is not necessary to break the abnk to afford it either. You can mix up the cuts that you buy one week a pork fillet, the next a cheaper but equally delicious cut such as pork belly.
Some people can be a little bit intimidated walking into a butchers but the butcher has a lifetime of expertise and product knowledge and can really help you choose the perfect cut for any occasion.
Try the Cajun pork recipe below with good quality pork fillet. Taking just half an hour to make, it tastes wonderful.
Preheating the oven to 180 degrees, season your pork fillet with 2 table spoons of Cajun spice. Place your pork in the oven and leave it to cook for 25 minutes to half an hour.
Whilst this is cooking, peel about 2 pounds (900g) of sweet potatoes and boil until nice and soft. Mash the sweet potato and add low fat fromage frais and spring onion before generously seasoning with black pepper.
For the final 15 minutes that your pork is cooking, place some honey drizzled pineapple rings alongside the pork fillet in the oven.
In just half an hour from start to finish you have a beautifully spiced dish.
